Cooking Through A Cookbook

Mom’s Apple Cake Review

Recipe 82 from The Smitten Kitchen Cookbook by Deb Perelman

WW Note: this serves 12-16 and for 1/12 you’ll use 17 points and 1/16 you’ll use 13 points. And of course half of a slice will get you a piece for 6 or 9 points. So, there’s hope! This is not a lost cause cake!

This recipe can be found in Deb Perelman’s “The Smitten Kitchen Cookbook” on pages 239-240 or her website too:

Aaaaandddd….Cakes! New chapter everyone! 9 cakes in this chapter and I am not much of a cake person so this should be interesting.

We’re also cutting out sugar (husband) and jumping back into WW (me) so I have my work cut out for me! Our life group meets Sunday so I’ll be baking on Saturdays to bring on Sundays! I’ll eat a small piece to get the taste and share it with everyone else! My husband is on his own and can figure out if he’s eating!

This cake is one you might do for breakfast, brunch for dessert. The cake is bursting with apples and all the flavors that pairs well with them. The life saver for this recipe is my Apple Peeler and Corer! I think it’s one of the gifts from our wedding registry that surprises me how much we use it. But there’s no way I would want to peel, core and chop these up without it!

I would also recommend both buttering and flouring the pan! I didn’t do that and you’ll see that I didn’t have a successful release! I always forget and regret that I don’t remember!

This cake will serve a small crowd so it would make a great breakfast cake. I would even say you could do this in a few loaf pans of you didn’t have a Bundt or Tube pan.

Also…here’s the trick if you mess up your cake….use the confectioners sugar! It covers a multitude of errors! It actually came out looking pretty despite the heap it plopped out in.

I had to piece it together to get a semi decent photo then decided to take out the bad chunk and I some how made it look appetizing! It’s a fun and tasty way to use up your apples from apple picking or just because you like cake and apples!

Happy baking Everybody!
