Recipe 26 from The Smitten Kitchen Cookbook by Deb Perelman
Okay, I sadly found a salad recipe that I’m not a big fan of, but I’m assuming it’s because I cut a couple corners and didn’t totally stick to the recipe.
The recipe of course calls for cranberry beans but I had a hard time finding them. I did eventually find a dried version on Amazon but they wanted $10 for the bag and I knew I would be making the poor man’s version of this guy since Deb herself suggests using other beans if you can’t find them.
The mistake I made was compromising with canned beans. I used white beans but they were too mushy which made the salad much less appealing.
I think the silly thing I also cut corners on was not toasting the walnuts. There is so much flavor that gets added when toasting nuts but the reason I didn’t has everything to do with blowing a fuse when our oven and AC are on and my eagerness to get this done and clean up the kitchen since I made this salad the same day I made the broccoli slaw.
I don’t love bean salads but I hoped so much for this one because I liked all the stuff going in. But alas…it was just not that good with my bean of choice. Doing some better research I realize now that the pinto bean would have been a more comparable alternative for this recipe. I read that the cranberry bean is a milder version.
When I take another go at this I want to try and find fresh cranberry beans because I know it’s going to be a vast improvement.
Okay, so moral of the story: don’t use white canned beans. Use fresh beans or cook them from dry so you can control the mush factor.
I found this recipe a few places but they don’t do a very good job of citing Deb as the source so I don’t want to put them on here. However, here’s another reason to go buy the cookbook!
